When I say that I’m a “Keto-Oregonian” it simply means that I am from Oregon and I follow a ketogenic diet. I don’t mean an I’m-trying-to-lose-weight kind of diet. It’s a lifestyle really, and for me, it’s more about being free from allergies, free from modern day illnesses (cancer, heart disease, inflammation, diabetes) and tapping that fountain of youth so I can age as I’m supposed to by design. There’s science out there to back up and show support of the health benefits, in spite of what our government and conventional wisdom have been feeding us for years. Our obesity epidemic and health crisis didn’t come about because we refused to take the advice – it was flawed advice.
A ketogenic diet – also known as Low Carb High Fat (LCHF) – involves eating real food: meat, eggs, fish & seafood, cheese (if tolerated), above ground vegetables & good natural fats (butter, olive oil, coconut oil, nuts & seeds, etc.) The goal is to switch your body from burning sugar as fuel, to it’s more efficient fuel source, ketones (aka FAT). Just like sugar in your car’s fuel tank will destroy the car, the same thing happens in our bodies – it’s just so subtle that we don’t recognize that it’s happening.
Being keto also means eating no grains. This helps a gluten-intolerant person, such as myself, live symptomatic free. Symptoms manifest themselves in so many different ways, it’s not just bloating, gas, diarrhea as you would think. I had those. (Most people are unaware that they even HAVE symptoms until they give it up!) I also had severe seasonal and drug allergies (not just taking, but breathing their dust or vapors). As a pharmacy technician, that made for a very dangerous work environment, as anaphylaxis and burning skin was my reaction. My allergist said I should just find a new vocation. Actually, removing the gluten healed my leaky gut which calmed my immune system which had been on red alert dealing with what it thought were foreign invaders for years. I think she should’ve known that as a specialist.
